Baked brie is the appetizer you want to serve when you have people over. The warm gooey cheese is smothered with all your favorite pizza toppings and topped with a drizzle of hot honey making it the perfect appetizer for any occasion. For those who love pizza, this is a hot take but with a lighter crispier crust because of that puff pastry and the oozy brie cheese is the perfect match for this 🍕
Ingredients for Brie pizza galette
This appetizer requires only a few ingredients and has all the flavors of a classic pizza… but better! It’s the perfect appetizer to make when hosting people over. Gather the ingredients below and this will take you under 15 minutes to make in total!
puff pastry
tomato sauce
brie cheese
pepperoni
oregano
hot honey
one egg
fresh basil
Quality of brie cheese matters! I always recommend using a brie cheese that is French- brie cheese originated in France so if it is French you know it’s creamy, has notes of mushroom and will melt really well! When melted, the cheaper brie cheeses can often pool with oil which means they aren’t the best quality and stuffed with fillers & additives. When making baked brie, spend a little bit more on the cheese to make sure it’s a quality one.
You can add on extra pizza toppings like chopped olives, onions, peppers, roasted tomatoes- anything you’d like! Don’t load it up too much because then the galette will be less crispy when baked. I love a classic pepperoni but I would try some olives added on next time too!

TIP: drizzle the hot honey on AFTER this bakes! If you bake honey it becomes very liquidy and watery. It’s always best to put on after.

Brie Pizza Galette

Ingredients
- 1 puff pastry
- 3 tbsp tomato sauce
- 8 oz brie cheese wheel sliced
- pepperoni
- 2 tsp oregano
- 2 tbsp hot honey
- 1 beaten egg (egg wash)
- 1/2 tbsp fresh basil chopped up
Instructions
- Pre-heat your oven to 400 F and line a baking tray with parchment paper
- Put your puff pastry on a baking sheet
- Add tomato sauce in the middle of your puff pastry sheet (leaving edges around it with nothing on them so that you can fold the puff pastry edges in easily).
- Add your brie cheese slices down on top of your tomato sauce on the puff pastry sheet and then arrange pepperoni slices (and any other pizza toppings on top)
- Fold in the edges of your puff pastry sheet
- Brush the puff pastry sheet with egg wash
- Sprinkle on some oregano
- Bake for 17-20 minutes or until puff pastry is golden brown
- Out of the oven drizzle on hot honey and fresh basil as a garnish
- Cut and enjoy this easy appetizer warm!
