Phyllo Baked Brie Bites

Baking brie is my love language! Some even say I am the Queen of baked brie (hehe only my husband actually). It is one of those cheeses that is just so versatile to use year round to make the most delicious appetizers and bites. These baked brie bites have ALL the flavors you could ask for. The brie cheese and fig jam are wrapped in phyllo dough which makes each bite oh so crispy and light. But then when you bite into it that creamy warm brie cheese oozes out. Just writing this, my mouth is watering. Serve this up at any party, holiday gathering with friends or just a casual appetizer for a Sunday winter dinner. It is sure to impress! 🧀

Ingredients for phyllo brie bites

Brie cheese, fig jam and a crispy flaky butter crust.. is the ultimate dream team! I wanted to combine my favorite things into one cheesy epic appetizer and this baked brie recipe is just that. It is an easy appetizer to make and always a hit at any get together. You will have this on repeat any time of the year!

You can prep this ahead of time and then pop into the oven just before people come over, that way it is served warm and fresh from the oven as phyllo dough is best served crispy and crunchy from the oven.

I recommend serving these in a pie dish or serving tray with a bit of a lip around it, that way nothing spills if you carry from one table to the next.

Find the ingredients below so you can make this garlic bread:

  • Brie cheese

  • Phyllo dough

  • Fig jam

  • Melted butter

  • Honey

  • Crushed salted pistachios

  • Fresh rosemary or thyme (garnish)

How to take it up a notch:

After you make these phyllo wrapped brie bites, consider adding on any of the following. I added on a drizzle of honey and crushed pistachios for an extra texture crunch & boy was it delicious!

  • hot honey

  • crushed nuts of choice

  • garlic butter

  • chili flakes or chili oil- make it SPICY!

Quality of brie cheese matters!

I always recommend using a brie cheese that is French- brie cheese originated in France so if it is French you know it’s creamy, has notes of mushroom and will melt really well! When melted, the cheaper brie cheeses can often pool with oil which means they aren’t the best quality and stuffed with fillers & additives. When making any recipe that requires you to bake the brie, spend a little bit more on the cheese to make sure it’s a quality one.

My favorite brands include:

  • Ile de France Brie Cheese

  • President Brie Cheese

  • alouette Brie Cheese

  • Marin French Brie Cheese

  • Sweet Grass Dairy Brie Cheese

  • Supreme Brie Cheese

Wrap the brie cheese up like a present in the phyllo dough and brush the outside with some melted butter to create a crispy top

Baked Brie Phyllo Bites

Want to make an appetizer to impress? Make these crispy, flaky, buttery brie bites. Brie cheese and caramelized fig jam stuffed into crispy phyllo dough. It is the perfect appetizer for any holiday get together!

Ingredients

  • 8 oz brie cheese wheel
  • 1 package of phyllo dough (makes around 20 brie bites)
  • 4 oz fig jam
  • 1/4 cup melted butter
  • 3 tbsp honey or hot honey drizzle (garnish)
  • 1/4 cup crushed salted pistachios (garnish)
  • Fresh rosemary or thyme (garnish)

Instructions

  1. Heat your oven to 400 F and lightly grease a muffin tin
  2. Cut brie cheese into long slices and set aside
  3. Lay down two phyllo sheets at a time and brush them with melted butter so they crisp up in the oven (I repeated this process 4 times and used 6 phyllo sheets in total for each long roll- I had 2 long rolls in total to make 20 brie bites)
  4. Add fig jam on the long end of the phyllo dough and add your brie cheese slices on top
  5. Roll phyllo dough like a cheese present and cut into bite sized slices (about 1 1/2" thick)
  6. Add each brie bite to the greased muffin tin and add the last bit of melted butter on the top and sides of each brie bite (the butter doesn't have to be perfectly on, just a bit on each helps to get golden brown and crispy)
  7. Bake for 20 minutes total
  8. Remove from the muffin tin out of the oven and add brie bites in a pie dish or serving tray.
  9. Garnish on top with honey, crushed pistachios and thyme and enjoy!

Notes

You can use any jam you'd like! It doesn't have to be fig jam.

You can always prep these ahead of time and bake when ready to serve
