Chicken Noodle Soup in the Slow Cooker
When the weather gets a bit cooler my body craves my mom’s homemade chicken noodle soup. It is jam packed with immunity boosting ingredients and SO easy to make all in the slow cooker or crockpot. This is the easiest chicken noodle soup you will ever make and a much make for cozy season.
When my body is cold and tired from the chillier months or I’m feeling a bit under the weather, I always throw together my mom’s homemade Chicken Noodle Soup recipe. The aroma that fills my house as it cooks is absolutely delicious. This is the soup I grew up eating and reminds me of a hug in a bowl from mom’s heart. It is surprisingly simple and easy recipe makes the BEST homemade chicken noodle soup with very little hands-on prep time!
Ingredients for chicken noodle soup in the slow cooker
This soup can be made one of two ways depending how much time you have on your hands.
You can make the chicken breast yourself in the crockpot which will add about 2-3 more hours of cooking. This is a great option if you are home for the day and able to take out the chicken pull it apart and then add it to the soup
OR
If you are working with limited time and need a quick and easy meal or soup, then grab a rotisserie chicken at the grocery store and pull it apart with your hands to get out all that meat. This is what I do when I am on a time crunch or want to make this soup while I am out and about or at work for the day.
Either way, this is a really easy soup to make with minimal ingredients. I have done it both ways above and honestly both taste delicious!!
Here is a list of everything you will need:
🥣 chicken breast (you can make your own in the slow cooker see recipe directions below for this option or use one ready made rotisserie chicken broken up)
🥣 noodles or Pastina of choice
🥣 onion
🥣 carrots
🥣 celery
🥣 minced garlic
🥣 juice of fresh lemons
🥣 chicken broth
🥣 bay leaves
🥣 smoked paprika
🥣pepper
🥣 garlic powder
🥣 parsley
🥣 Parmesan cheese
You can make your own chicken broth but my preference is using Knorr Chicken Bouillon- you just boil your desired amount of water and add in however much chicken stock you’d like. This makes it easy to control the taste of your chicken broth and how strong you like it.
The best way to shred your chicken- whether you are doing the chicken breast slow cooker method OR the rotisserie chicken is to use two forks or your hands. This makes it really easy to pull apart and make as small as you’d like.

I love adding fresh parsley and grated parmesan cheese on top. This soup is EASY to prepare ahead for the week and pull out as needed. It also freezes really well if you want to make a big batch ahead and store some in a sealed container.

Easy Chicken Noodle Soup (in the slow cooker or crockpot)
When the weather gets a bit cooler my body craves my mom’s homemade chicken noodle soup. It is jam packed with immunity boosting ingredients and SO easy to make all in the slow cooker or crockpot. This is the easiest chicken noodle soup you will ever make and a much make for cozy season.
Ingredients
- 1 1/2 - 2 lbs chicken breasts or chicken thighs (see below for recipe to make your own) OR 1 store-bought rotisserie chicken (pulled apart)
- 1 cup noodles or Pastina of choice
- 1/2 chopped onion
- 4 carrots, peeled and chopped
- 4-5 celery sticks chopped
- 3 cloves minced garlic
- 2 lemons juiced (you are only using the lemon juice for this recipe)
- 8 cups chicken broth (add more after if you'd like)
- 2 tsp smoked paprika
- 1 tsp pepper
- 2 tsp garlic powder
- 1/3 cup finely chopped parsley
- 1/3 cup freshly grated Parmesan cheese (optional)
Instructions
- If you want to make shredded chicken from scratch follow this part of the recipe FIRST.
- Set slow cooker to high
- Add paprika, salt, pepper and garlic powder to both sides of your skinless chicken breasts or chicken thighs
- Then add them to the bottom of the crockpot
- Add in 4 cups of water of chicken stock
- Cover the crock pot and cook on LOW- 6 hours or HIGH- 3 hours
- Once chicken is cooked, remove the chicken and shred with two forks and return chicken to the slow cooker for next step to make the soup.
- Follow step above if you plan to make shredded chicken from scratch OR use one rotisserie chicken and shred it yourself to desired sized pieces. Add chicken to your slow cooker or crockpot.
- Add in chopped carrots, celery, onions, minced garlic, seasonings and chicken broth in the slow cooker with the shredded chicken and cover with lid. Cook on LOW- 5 hours OR HIGH- 3 hours until veggies are softened.
- After everything has cooked together, add in your Pastina or noodles of choice (I always add these in at the end so they don't overcook and they cook to El Dente). Cover slow cooker and cook pasta noodles with the soup for 20-30 minutes
- Garnish soup with freshly chopped parsley and parmesan cheese
- Serve right away or store some away in the fridge for the week or freezer.
- I like to enjoy with saltine crackers or a warm bun/baguette

Will stay fresh in the freezer (sealed container) for up to 1 month
