It contains only three ingredients: dill pickles, onions and fresh dill- making it really easy to whip up in under 5 minutes. A different take on your classic tomato bruschetta because this one is for those who love pickles. It is served great with crackers or with freshly baked crostini topped with cream cheese or a whipped feta. And BONUS, it’s actually a really healthy and fresh snack to serve up as well! Ingredients for DILL PICKLE BRUSCHETTA
If you want to love bruschetta but hate tomatoes and LOVE dill pickles, then this is recipe you need to make! It’s salty, tangy and sour with those dill pickles but balanced out nicely with crostini topped with some cream cheese. The cream cheese is creamy which balances out the acidity that the pickles bring. It’s a match made in heaven! 🥒
Find everything you will need below and use this as your grocery shopping list:
dill pickles (I get the full speared ones vs sliced, so I can chop them as I’d like)
red onion
fresh dill
freshly cracked pepper
baguette
olive oil
flaky sea salt
cream cheese
Ingredients:
Pickles- Nothing beats Grillo pickles- I don’t know why they taste the best but they do. As a dill pickle LOVER, I can attest that this really is the best brand of pickles to buy from the store.
Red onion- I like a stronger flavored onion for this recipe as it balanced out the salty and tangy dill pickle. If you’d prefer an onion that is not as strong then buy a white or sweet onion. Looking for something even more delicate in flavor, then get a shallot.
Baguette- making fresh crostini is EASY and can be done in under 10 minutes with only 3 ingredients- homemade is always better than store bought. If you are on a time crunch, feel free to use store bought crostini, pita bread or crackers instead!
Cream cheese- Since pickles are salty, tangy and sour you’ll want something to balance out those flavors. Spreading some cream cheese on a cracker or crostini can do just that. If you are looking for a substitute, you can always make a whipped feta, add on a slice of cheddar or provolone.

Pickle Bruschetta

Ingredients
- 6-8 dill pickle spears
- 1/2 red onion
- 2 tbsp freshly chopped dill
- 2 tbsp pickle juice
- 1 tsp freshly cracked pepper
- 1 baguette
- 2 tbsp olive oil
- 2 tsp flaky sea salt
- 1/2 cup cream cheese
Instructions
- Heat oven to 400 F and line a baking sheet with parchment paper
- Slice the baguette into 1 inch slices and put each one down on the baking sheet
- Brush the olive oil on the baguette slices and sprinkle one side with flaky sea salt
- bake crostini in the oven for 10 minutes, making sure you flip the slices half way through baking
- While the crostini bakes, make the pickle bruschetta but chopping up pickles, onions and fresh dill and adding to a bowl
- Add in the pickle juice and pepper and mix the bruschetta
- Add a bit of cream cheese to each crostini slice and serve crostini alongside the pickle bruschetta mix
Notes
You can make this up to 1 day ahead of time. It also stores well in the fridge for a few days as an easy snack or appetizer.
