Brie Cheese & Tomato Galette

Baked brie is the appetizer you want to serve when you have people over. The warm gooey cheese is smothered with fresh ripe & colorful tomatoes and is such an elegant appetizer for any occasion. I love serving this up for the long weekend get togethers like Memorial Day, Fourth of July and going into the summer months. It is easy to make, requires minimal ingredients and it always a hit. Best served with a glass of chilled white wine or Pinot Noir. I think we can all agree that brie cheese is the best melted cheese is the world!
Ingredients for Brie cheese & tomato Galette
This appetizer requires only a few ingredients and has all the flavors of the spring and summer season! It’s the perfect appetizer to make when hosting people over. Gather the ingredients below and this will take you under 15 minutes to make in total!
brie cheese
puff pastry
heirloom tomatoes
balsamic glaze
flaky sea salt
egg
fresh basil (garnish)
Quality of brie cheese matters! I always recommend using a brie cheese that is French- brie cheese originated in France so if it is French you know it’s creamy, has notes of mushroom and will melt really well! When melted, the cheaper brie cheeses can often pool with oil which means they aren’t the best quality and stuffed with fillers & additives. When making baked brie, spend a little bit more on the cheese to make sure it’s a quality one.
TIP: cut your tomato slices really thin, I find that they they fit better in the galette and taste delicious like this!

TIP: drizzle the balsamic glaze on AFTER this bakes! If you bake the glaze it becomes very liquidy and watery. It’s always best to put on after for a garnish to keep its original form as a thicker glaze.

You want to leave an opening in the middle for the galette and brie cheese to breathe and cook evenly while it bakes

Ingredients
- 8 oz brie cheese
- 1 puff pastry sheet
- 6-8 slices of tomato (sliced thinly)- I like to use what is in season- Heirloom tomatoes go great with this recipe or Roma tomatoes
- 1/2 tsp flaky sea salt
- 2 tbsp balsamic glaze
- 1 egg (egg wash)
- freshly chopped basil (garnish)
Instructions
- Pre-heat your oven to 400 F and line a baking tray with parchment paper
- Put your puff pastry on a baking sheet
- Cut your brie cheese into slices and cut your tomato into thin slices
- Add your brie cheese slices down first int he middle of the puff pastry sheet and then arrange your tomato slices on top
- Fold in the edges of your puff pastry sheet
- Brush the puff pastry sheet with egg wash
- Sprinkle on some flaky sea salt
- Bake for 15 minutes or until puff pastry is golden brown
- Out of the oven drizzle on balsamic glaze and fresh basil as a garnish
- Cut and enjoy this easy appetizer warm!
Notes
Note: for the pear use either Bartlett, Bosc, and Anjou pears as these are the best options for baking with due to their sweet juicy flavor!
