Baking brie is my love language! Some even say I am the Queen of baked brie. It is one of those cheeses that is just so versatile to use year round to make the most delicious appetizers and bites. This baked brie has ALL the flavors you could ask for. It’s wrapped in phyllo dough which makes it crispy and light but then when you cut into it that creamy warm brie cheese oozes out. The brie is smothered in garlic butter so it has so much flavor inside that phyllo dough. Then its topped with hot honey to give is a bit of a kick. Just writing this, my mouth is watering. Serve this up at any party, gathering with friends or just a casual appetizer for a Sunday. It is sure to impress! 🧀

Brie cheese, garlic butter and a crispy flaky butter crust.. is the ultimate dream team! I wanted to combine my favorite things into one cheesy epic appetizer and this baked brie recipe is just that. It is an easy appetizer to make and always a hit at any get together. You will have this on repeat any time of the year!
You can prep this ahead of time and then pop into the oven just before people come over, that way it is served warm and fresh from the oven.

Quality of brie cheese matters!
I always recommend using a brie cheese that is French- brie cheese originated in France so if it is French you know it’s creamy, has notes of mushroom and will melt really well! When melted, the cheaper brie cheeses can often pool with oil which means they aren’t the best quality and stuffed with fillers & additives. When making any recipe that requires you to bake the brie, spend a little bit more on the cheese to make sure it’s a quality one.

Crispy Garlic Butter Baked Brie with Hot Honey
Want to make an appetizer to impress? Make this crispy baked brie smothered in garlic butter and topped with hot honey. It is the perfect party appetizer and is the perfect combination of sweet, savory & spicy.
Ingredients
- 8 oz brie cheese
- 1 puff pastry sheet
- 2-4 sheets of phyllo dough
- 3 tbsp melted butter (to brush onto phyllo dough)
- 3 tbsp melted butter (for garlic butter mixture)
- 2-3 cloves minced garlic
- drizzle of hot honey
- 1 tsp chopped fresh rosemary or thyme (garnish)
Instructions
- Pre-heat your oven to 350 F and line a baking tray with parchment paper
- Lay one sheet down of puff pastry and brush on some melted butter, then lay on another sheet of phyllo dough and brush with melted butter (repeat this one more time so you should have 2-4 sheets of phyllo dough down)
- Put your brie cheese wheel in the middle of the phyllo dough and score the top of it with cross hatch marks (this will allow the brie cheese to breathe and cook evenly in the oven)
- To make your garlic butter mixture: in a small bowl combine 2 tbsp of melted butter with 2-3 minced garlic cloves and stir well
- Add garlic butter mixture on top of your brie cheese wheel
- Fold in the edges of the phyllo dough to wrap the brie cheese up like a present
- Brush the phyllo dough top with some more melted butter
- Then put int he oven and bake for 20 minutes or until the outside of the phyllo is crispy and golden brown
- Out of the oven garnish with some chopped up rosemary or thyme (optional) and drizzle with hot honey
- Once you cut into this it will start oozing cheese! Be sure to make the first cut when guests arrive as its really fun to watch the creamy cheese ooze out.
- Serve with crackers or a baguette and enjoy this cheesy appetizer!
Notes
Note: for the pear use either Bartlett, Bosc, and Anjou pears as these are the best options for baking with due to their sweet juicy flavor!
You’ll want to cut into this baked brie out of the oven in front of your guests because it really is a show watching the creamy hot cheese ooze out!
Top with hot honey AFTER it bakes in the oven. If you put the honey on before it bakes, it will come out watery which will defeat the purpose of having a crispy outer shell of phyllo dough.
