Hot Honey Carrots with Whipped Feta
Hot honey glazed carrots are the perfect side dish for any occasion. They are made easily with minimal ingredients and come out tender and sweet with a little bit of heat! Paired with a whipped feta, you have the perfect combination of sweet, spicy and salty.
This is one of those side dishes that is easy to make ahead of time. When you roast these carrots in this hot honey mixture they become caramelized and have the crispiest edges. They are perfect to serve as a side dish to a busy weeknight dinner or holiday meal. The whipped feta pairs beautifully with these carrots adding a salty tangy flavor. You can always replace the hot honey with regular honey but trust me, try these with hot honey, it adds a ton of flavor without being too overly spicy. They are a must make for Thanksgiving, Christmas, Holiday get togethers or really a side dish any time of year.

Ingredients for HOT HONEY GLAZED CARROTS with whipped feta
This side dish can be made ahead of time! I often let the carrots marinate in the honey glaze overnight to really make them soak up that flavor but you can also make them the day of and they will taste just as good. You can also make the whipped feta in advance and it can sit in the fridge for 1-2 days. It literally whips up in minutes and is super quick to throw together. The whipped feta adds a nice salty and tangy flavor to the carrots.

Carrots- I used colorful petite carrots but you can use any kind you’d like!
Olive Oil
Hot Honey
Garlic
Cinnamon
Smoked Paprika
Salt & Pepper
Fresh Thyme
Feta Cheese
Greek Yogurt
Fresh Thyme
TIP: Use a full fat feta cheese for this recipe AND if it comes in any brine be sure to get rid of that as it will make your whipped feta very watery if you add it to the recipe. A full fat feta whips thicker & fluffier which is exactly what you want when making it! Be sure to drain out any of the brine or pat your feta block dry to ensure it whips well.
You can always substitute the hot honey for regular honey! I have made these both ways and enjoy them equally. If you are worried about the hot honey being too spicy, don’t be. Once hot honey cooks down it becomes mild in spicy flavor. I always like adding a bit more honey on after the carrots bake too- makes for a nice presentation as well.

Hot Honey Glazed Carrots with Whipped Feta
Hot honey glazed carrots are the perfect side dish for any occasion. They are made easily with minimal ingredients and come out tender and sweet with a little bit of heat! Paired with a whipped feta, you have the perfect combination of sweet, spicy and salty.
Ingredients
- 2-3 lb carrots peeled and cut
- 3 tbsp extra virgin olive oil
- 1/4 cup hot honey
- 2 garlic cloves minced
- 1 tsp cinnamon
- 1 tsp smoked paprika
- salt and pepper
- fresh thyme (garnish after baking)
- 16 oz full fat feta cheese (pat down and make sure it is dry)
- 2 tbsp olive oil
- 2 tbsp greek yogurt
Instructions
- Pre-heat your oven to 425 F (if baking the day of)
- Make sure you wash, peel and cut your carrots. I used petite carrots so I didn't have to cut mine a lot.
- In a small bowl mix together all ingredients for your hot honey glaze and toss your carrots in it. Either cover carrots and let marinate for a few hours or overnight OR bake right away
- Put the carrots on a baking sheet lined with parchment paper and bake carrots for 20-25 minutes until you can stick a fork through them easily. Toss them half way through cooking time to make sure they are cooked all the way through and evenly
- You can always set your oven to broil for the last 3 minutes of cooking to really caramelize them if you like crispy edges!
- While that bakes add whipped feta ingredients to a food processor or blender and blend until smooth. If it is not getting smooth then add a bit more olive oil.
- Arrange your whipped feta on a plate and top on your baked carrots
- Add on a drizzle of hot honey and garnish with fresh thyme to finish them off
- ENJOY! This can be prepared ahead of time (up to one day in advance) and pop in the oven before people come over.
TIP: Drizzle on a bit more honey after they bake. You can never have enough honey!
