Brie is one of those cheeses that bakes seamlessly in the oven and it is an easy way to level up your pasta to make it extra creamy. The real cherry on top is that crispy prosciutto and hot honey making this pasta elevated but EASY to make. I love to make it for when I have friends or family coming over as a quick and easy meal but you can also find it in our weekly dinner rotation as it’s paired deliciously with shrimp or chicken. You’re going to fall in love with this dinner recipe and how simple it is to throw together.

Ingredients for baked brie pasta

Brie cheese is one that is very versatile in dishes. When it’s baked it is magically as it gets so creamy and melty and bakes up perfectly every time. It offers that pasta a creaminess paired with a bit of garlic, butter and cream and packed with flavor from that crispy prosciutto. It also pairs beautifully with hot honey as well if you like some sweet heat.

You really only need a handful of ingredients to make this one and the oven does all the work for you. Just toss everything into a baking dish, put it in the oven covered and BAM you have yourself a delicious dinner.

Ingredients you need to make this recipe:

  • Brie cheese

  • Pasta noodle of choice (I would suggest a penne, rigatoni or shells)

  • Chicken broth

  • Butter

  • Garlic

  • Heavy cream

  • Parmesan cheese

  • Prosciutto

  • Red pepper flakes

  • Italian seasoning

  • Salt & pepper

My favorite baking dishes to use are either from Staub or Pyrex- great quality and they are easy to clean even after the toughest of bakes. At such a great price point you can’t go wrong!

Ingredients:

Brie cheese- HUGE fan of Brie cheese (as you might know). It is one of those cheeses that just goes well with everything and I use it in a lot of my recipes. If you are looking for a substitute you could always so Boursin cheese for this recipe, but maybe use two of them since they are smaller than a brie cheese wheel.

Proscuitto- If you have never baked prosciutto before, YOU NEED TO! It comes out so crispy and salty and is such an easy addition to pasta recipes or salads. It adds a lot of flavor to this pasta bake but you can substitute with another protein like shrimp or chicken if you’d like.

Chicken broth- I find chicken broth to add a lot of flavor but if you’d like to use a vegetable broth that totally works too.


Other optional add in’s: mushrooms, spinach, lemon zest (for a more spring or summer forward flavor) or even some truffle oil drizzled on top after baking would be delicious!

Baked Brie Pasta with Crispy Prosciutto

Ingredients

  • 15–16 oz short pasta (rigatoni, penne, or shells)
  • 1 (8–12 oz) wheel of brie (rind on or top rind trimmed)
  • 4 tbsp melted butter
  • 4–5 cloves garlic, minced
  • 1 ¾ cups hot chicken or vegetable broth
  • 1 cup heavy cream
  • ½ cup freshly grated parmesan
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 4 oz prosciutto
  • Optional: fresh thyme, red pepper flakes, hot honey

Instructions

Crispy Prosciutto
  1. Heat oven to 400 F and line a baking sheet with parchment paper
  2. Add slices of prosciutto to the baking sheet and bake in the oven for 5-7 minutes
  3. Let rest after baking for 3 minutes before crumbling on top of pasta
Baked Brie Pasta
  1. Heat oven to 375 F and lightly grease a baking dish 9 x 13
  2. In a large baking dish (9x13 works well), add: uncooked pasta, broth, cream, minced garlic, melted butter, salt and pepper, red pepper flakes (if you'd like it a bit spicy) and stir all together. The uncooked pasta should be 90% covered in liquid before it goes into the oven to bake
  3. Score the top of your brie cheese wheel (a few crosshatch marks just on the top rind) and add the entire brie cheese wheel in the middle of the pasta dish
  4. Cover baking dish with foil and bake for the first round for 35-40 minutes (this is key to make the sauce thicken a bit and cook the pasta to el dente)
  5. Out of the oven, take off the foil (and throw foil out) and your brie cheese should be looking melty. Give everything a good stir and mix that melty brie cheese in with the pasta and sauce.
  6. Add some parmesan cheese on top of the pasta and bake UNCOVERED for 10 minutes. Until pasta is cooked and most of the liquid is absorbed by the pasta.
  7. Out of the oven let everything rest for 5-10 minutes (this will help to thicken the sauce)
  8. Stir and add on parmesan cheese, crispy prosciutto and hot honey as desired and enjoy!
