Blueberry Goat Cheese Flatbread

Are you ready for the easiest Spring pizza? This baked flatbread pizza requires only a few delicious ingredients, loaded with goat cheese, blueberries and zesty lemon. It is perfect as an appetizer, light dinner or Sunday brunch. Why not make this for Easter, Mother’s Day or just any family gathering?

Forget complicated pizza dough that takes hours for the dough to rise, if you are looking for an easy flatbread appetizer to make then this is it! There are so many different options that you can add on to make this sweet or savory for Spring time hosting. Once of my favorites is this recipe the blueberries and goat cheese really compliment one another! You will have to try it out the next time you have people over. It’s an easy appetizer to whip together and takes little to no time at all.

Ingredients for blueberry goat cheese flatbread

When I host dinner parties the most requested recipe is always homemade pizza, so I wanted to make something a bit different this spring. A pizza but made with a lighter dough and ingredients that are seasonal. First thing that came to mind was this blueberry goat cheese flatbread- it has some sweetness to it but the blueberries and arugula make it light and fresh! You can make this on a store-bought flatbread (I get mine from Trader Joe’s for under $5) or a tortilla, pita or pizza dough would even work. I love the Trader Joe’s flatbreads because they come in a pack of two (one for today and one for tomorrow OR use both when hosting people over). They are always fresh and bake well in the oven without falling apart when there are toppings.

You will only need a few ingredients to make this and TRUST me when I say you will be making a second because they are that good.

  • Flatbread

  • Goat cheese

  • Blueberries

  • Lemon zest

  • Arugula

  • Honey

My favorite pans are USA pan - great quality and they never change color or warp on me. At such a great price point you can’t go wrong!

Ingredients:

Goat Cheese- I am not a huge fan of goat cheese (SHOCKER, I know!). It is crumbly and tangy and well pained with this flatbread pizza. Trust me, I loved the warm baked goat cheese on here! If you are looking for a substitute, try feta, brie or even mozzarella would be delicious.

Blueberries- I used fresh blueberries and they burst in the oven making them taste jammy! You could always substitute for raspberries here.

Lemon Zest- Balances out the sweetness of this recipe and compliments the goat cheese and blueberries

Arugula- I added this on after the flatbread baked and it offered a different flavor profile and texture to the appetizer

Honey- I drizzled a bit on after the flatbread baked which added some sweetness and is perfect going into Spring & Summer!

Blueberry Goat Cheese Flatbread

Ingredients

Chimichurri Sauce
  • Flatbread (see notes below)
  • 1 tbsp olive oil
  • 8 oz goat cheese
  • 6 oz fresh blueberries
  • 1 tbsp lemon zest
  • 1 cup arugula
  • 1 tbsp honey drizzle

Instructions

  1. Heat oven to 375 F and line a baking sheet with parchment paper
  2. Lay down your flatbread or pita on the baking sheet
  3. Drizzle some olive oil on the flatbread
  4. Break the goat cheese up into small pieces and scatter on the flatbread
  5. Put the fresh blueberries on top of your goat cheese, again scattering it at random on the flatbread
  6. Zest a lemon and add it on top of the goat cheese and blueberries
  7. Put flatbread in the oven for 10-15 minutes until flatbread is browning a bit
  8. Once out of the oven, first cut the flatbread into equal slices and then add on your arugula for a fresh bite and a drizzle of honey
  9. Serve this easy goat cheese flatbread right away!

Notes

For the flatbread feel free to buy any of the following: store-bought flatbread (I get mine from Trader Joe’s for under $5) or a tortilla, pita or pizza dough would even work.
