Lemon Ricotta Sheet Pan Pancakes

This easy Lemon Ricotta Sheet Pan Pancakes recipe is baked entirely in the oven, and perfect to feed a crowd. They are light, fluffy and perfectly zesty with that lemon flavor. No flipping multiple batches at the stove and you can add a few different toppings if you’d like!

I’m always looking for ways to get breakfast and dinner on the table faster and these Sheet Pan Pancakes might just be your new go to too! Not only are they easy to whip up, but they’re super convenient. You can pour the entire pancake batter on one baking sheet and top it with your favorite toppings, or leave it plain. The ricotta cheese is my hack to making them oh so light and fluffy and the lemon just adds that light zesty flavor. They are easy to meal prep or make for breakfast or brunch to feed the whole family! I love making these in the spring time, for Easter and Mother’s Day 🍋🥞

My family & friends love these pancakes because they are so light and fluffy. They truly scream spring time. This has now turned into our Sunday morning routine. The issue with pancakes when you are feeding a big group is that flipping and making several batches takes quite a while. And I have to try and keep the first few batches warm in the oven, while I make the rest of the pancakes. Always the biggest struggle!!

If I am making this when I host people over for brunch, then like to assemble on the morning that I plan to serve it and then just pop it right in the oven before everyone is ready to eat. Slice and SERVE! It is that easy.

TIP: don’t over mix your batter. You might see some chunks and that is okay, it is from the ricotta cheese and will bake out in the oven smooth.

TIP- tap the sheet pan to make sure all the batter spreads out evenly

Lemon Ricotta Sheet Pan Pancakes

This easy Lemon Ricotta Sheet Pan Pancakes recipe is baked entirely in the oven, and perfect to feed a crowd. They are light, fluffy and perfectly zesty with that lemon flavor. No flipping multiple batches at the stove and you can add a few different toppings if you’d like!


Ingredients

  • 4 cups Krusteaz Sweet Cream Pancake Mix
  • 2 1/2 cups of cold water
  • 1 cup whole milk ricotta cheese
  • 3 large eggs
  • zest of 1 lemon
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • Optional: add blueberries or raspberries into the batter
  • Optional lemon glaze: 1 cup powdered sugar, 1-2 tbsp lemon juice

Instructions

  1. Heat the oven to 400 F and line a baking sheet with parchment paper. I used a 9 x 13 baking sheet for this
  2. In a large bowl add in your wet ingredients: eggs, water, ricotta cheese, lemon juice, vanilla extract and lemon zest
  3. Then fold in your pancake mix- the batter should be thick but small lumps are fine. No need to over mix it as it will bake up smoothly.
  4. Pour pancake batter on the baking sheet and smooth it out
  5. Bake for 15-20 minutes until the top is lightly golden brown and the center is set (I stick in a tooth pick to check the middle of mine is cooked through)
  6. Cool for 5 minutes and then cut into even slices.
  7. Serve with lemon glaze (recipe is below) OR maple syrup or just a bit of icing sugar! They are also fantastic paired with some fresh fruit!
Lemon Glaze
  1. Add powdered sugar to a bowl
  2. Whisk in your lemon juice 1 tbsp at a time and add more as needed
  3. You don't want the consistency to be too runny so if it is, just add a bit more powdered sugar!
  4. Let the pancakes cool for a few minutes, THEN add this on top so it sets better or let people add the glaze on themselves
